This easy to make salad recipe is fresh and light. Makes the perfect side dish.
Ingredients
1/3 cup red wine vinegar
2 tablespoon white sugar
1 large cucumber (cubed)
about 20 cherry tomatos (quartered)
1 small chopped red onion
2 tablespoons olive oil
6-8 fresh mint leaves (or basil)
salt and pepper to taste
Directions
1. Combine all ingredients into a large bowl and mix well
2. Refrigerate for 30 min and serve
